Cacao and chocolate captivates so many of us in the industry because you'll never stop learning. Although it has millennia of history, some of its research is just getting underway. In the last ten years there have been exciting breakthroughs rewriting history, expounding our understanding of its origins, and introducing us to more varieties imagined.
